The Quest for a Perfect Espresso It is generally agreed that there are four basic elements critical to the perfect cup: Element 1: WATER When brewing espresso, make sure the water flows through the filter at the correct pace. The water flow can be adjusted by varying the pressure with which the coffee is taped in the filter or by altering the grind of coffee. If the speed of the water is slow the coffee will be over extracted and will be very dark and bitter, with a spotted and uneven creme (froth) on the top. If the speed of the water flow is too fast, the coffee will be under-extracted and the supreme flavor will not develop. Element 2: COFFEE While the bulk of the liquid is water, all of the flavor should be from the coffee. To achieve the same great quality of coffee you receive at a cafe, you need to use the same quality beans. If you choose to grind your own beans, buy the beans fresh and whole, only about a two week supply at a time for maximum freshness. Once the coffee bean is broken, its flavor degrades very quickly. If the grind is too fine, over extraction and bitterness will occur with a spotted and uneven crema on top. If the grind is too coarse, the water will pass through too rapidly and there will be an inadequate amount of crema on the top of the espresso. Element 4: TAMPING THE COFFEE GROUNDS If you choose to use ground espresso instead of pods, tamping the coffee is a very important part of the coffee making process. Use the scoop supplied to fill the filter basket, then using the tamping tool, tamp down the grounds with moderate pressure. Add more coffee and tamp again if necessary to bring coffee to level. Do not overfill the filter basket. The ground coffee should be tamped with moderate pressure. If the coffee is not tamped securely, there is a chance the water will flow through the coffee to rapidly and the coffee will be under-extracted. Guide to the Perfect Espresso You may want to preheat the cups by filling them with hot water; this will help preserve the crema of the espresso. Set the cups aside. Select the appropriate filter basket and insert it in the portafilter handle. Using the measuring scoop place finely ground coffee in the filter basket holder. Use one scoop for one cup and two scoops for two cups, or place espresso pod into filter basket holder. Rest the portafilter handle with the filter basket in position on the countertop. Using the tamping tool, apply moderate packing pressure. Brush any excess grounds form around the edge of the filter basket. Secure the portafilter holder onto the brew head. Check to see if the espresso machine is ready for use. Remember that if the heating light is on, the espresso machine is still adjusting the temperature of the heating system. The steam wand is an easy fix for anyone who is mechanically inclined. It's also a good idea to have an extra group seal on hand. Also, clean the machine every 6 months or so with citric acid or the Keurig cleaning solution. Then run several tanks of water through to rinse the machine.We were very happy with the product when just got it, but in about a year or even less the steam wand broke. We were told to ship the whole machine back to the company for the repair, so we did. Was on phone with customer service for an hour having to literally ARGUE with an agent -- who refused for a long time to transfer me to a supervisor -- and then with a supervisor. After all that, no resolution. All they offered to do was pick up the machine and send it for repairs.but we'd have to stay home, waiting for pick-up, for a 2-3 day period -- which could not even be scheduled for a particular week. (We're leaving for vacation in a couple of days.) Or -- get this! -- they'd email us a shipping label so we could take the machine to UPS at our convenience, but it would take them 2-3 DAYS TO SEND THE EMAIL. An email! After that it would be about a month before we got the machine back. The new one is truly awful -- sounds like a combine harvester, and now, after just 5 months, it makes nothing but sludge with black crema and a half-inch of grounds on the bottom of a weak, bad-tasting cup of coffee. I've cleaned and re-settled all the external parts every way I can think of, to no avail. I'd expect better of a machine that cost half of much. The steam doe s two thi ngs; it heats the milk and mixe s air with the mil k to form a cr eamy textu re.With the st eam wan d posit ion ed over the dri p tray, acti vate the ste am func tio n by turnin g the functi on kno b to the ste am sett ing (20). Onc e any wat er has bee n pur ged, st op the ste am by turni ng the functi on kno b to the off po siti on (21 ). 4. Swin g the ste am wand to the side of the espr ess o mac hine (22). 5. Plac e the ste am wand into the milk so tha t the noz zle is abo ut a half -inc h belo w the surfac e and act iva te the ste am func tio n by turni ng the functi on kno b to the ste am sett ing (23 ). 6. Angl e the pit cher so that the ste am wand is res ting on the spout of the pitch er and low er the pi tche r unti l the tip of the steam nozzle is just bel ow the su rfac e of the mil k. This will sta rt to cr eat e a whirl pool act ion in th e milk (24 ). If this is hap peni ng, raise th e pitch er so tha t the ste am noz zle is lo wer ed far the r into th e milk. 7. As the stea m heats and text ur es the milk, the level of the milk in the pitch er wil l begi n to ris e. As thi s happe ns, follow the leve l of the milk by low erin g the pit cher, alway s kee ping the tip of the steam nozzl e just bel ow the su rfac e. 8. Once the foam is cr eat ed, rai se the pi tche r unti l the ste am nozz le is in the cen ter of th e milk (25 ). TIP: The amou nt of foa m r equi re d will vary dep endi ng on the drink s being made; for exam ple, a cap pucc ino requ ir es mor e foam than a latt e. 9. Sto p the ste am imme dia tely whe n the mil k is heate d by turni ng the functi on kno b to the off pos iti on (26). IMP OR T ANT: Do not boil the milk. 10. Remove the pitc her, imm edia tel y wipe the ste am nozz le and wand wit h a clean damp clot h (27 ) and pur ge a small amo unt of st eam.

Nev er imme rse unit in wat er or oth er liqu id. T o cle an, sim ply wipe wit h a clean da mp clot h and dry befor e stor ing. The inside of the brew head should be wiped with a damp cloth to remove any coffee particles. Do not use any scouring agents or harsh cleaners. Use a non- abrasive washing liquid. NOTE: Do not clean any of the parts or accessories in the dishwasher. DECALCIFICA TION Decalcification refers to the removal of calcium deposits that form over time on the metal parts of the coffeemaker. For best performance from your espresso maker, decalcify the unit from time to time. The frequency depends on the hardness of your tap water and how often you use the coffeemaker.
